By not showing the relationship between Harry and Dumblefore was a big item left out, especially because of the doubts that Harry has about Dumbledore in the Deathly Hollows. Though I doubt it, maybe they will correct some of the mistakes in the last two movies I agree. These are all key elements to the HBP and they were just omitted! The worst alterations between book and movie were definitely, as you've said, the fight scene at Hogwarts at the end, and the insertion of the fight scene at the Burrow. Why would they destroy the Burrow? Obviously they don't intend to include the wedding scene in the last movie, where Harry's journey towards finding out the Hallows really kicks off!
